Sons of Eden Studium Sagrantino 2015
The traditional home for Sagrantino is a short distance north of Rome in the Umbria wine region of central Italy. For centuries Sagrantino has been used by the Roman Catholic Church as a sacramental wine during its Vatican Mass.
Sagrantino is deeply coloured and is one of the most tannic grape varieties, despite generally being a medium bodied wine the plumage of tannin promotes the mouthfeel. The exotic red cherry, dried herb, and smoky blue-fruits typify the aroma and flavours of Sagrantino.
Winemaking: Hand-picked, destemmed with 10% whole bunch clusters, cold soaked for 5 days, naturally fermented for 20 days.
Pressed to 500 litre French barrels for 15 months unhindered maturation. Bottled without fining or filtration.
