Spinifex Aglianico 2016
This is the 5th vintage we have sourced fruit from the Amadio Vineyard in the northern Adelaide Hills. As is typical, this single vineyard Aglianico was the last parcel we harvested in 2016. Fruit was hand harvested and fully destemmed prior to fermentation with indigenous yeast. Following a 12 day maceration the young wine was pressed directly to tank where it rested on lees untouched prior to a single racking to bottling in late November 2016. This is the first Aglianico we have produced that has been wholly matured in tank - with no wood being utilized.
